Aji Amarillo is native to South America.  Unlike the majority of culinary Chiles, it is not a cultivar of the Capsicum Annum, but rather follows the line of Capsicum Baccatum.  Used both fresh as well as dried as a base for sauces and condiments.

Common in Peruvian and Bolivian cooking.Add to rice before cooking.  Mix with minced red onion and vinegar as a condiment.  Add to root veggies, salsa, stews, seafood dishes, and sauces.  Rehydrate in boiling water for about twenty minutes to make a paste.
