Tutti Frutti Marinade for Soy Curls or Tofu

Ingredients:
1 cup soy curls or cubed extra firm tofu
1/4 cup aquafaba
2 Tbsp date paste
2 Tbsp balsamic vinegar
2 cloves garlic, minced
1 Tbsp Tutti Fruitti Jaroudi Blend
1 tsp Dijon mustard
1/2 tsp miso paste
1/4 tsp black pepper

Directions:
1.) If using dehydrated soy curls, rehydrate them according to the package instructions. Soak them in water for about 10 minutes, then drain well.

2.) In a mixing bowl, combine aquafaba, date paste, balsamic vinegar, minced garlic, Tutti Fruitti Jaroudi Blend, Dijon mustard, miso paste, and black pepper. Whisk until well combined.

3.) Place the rehydrated soy curls or cubed tofu in a shallow dish. Pour the marinade over the soy curls, ensuring they are evenly coated. Cover the dish and allow the soy curls to marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours, to absorb the flavors.

4.) After marinating, you can cook the soy curls or tofu according to your preference. You can sauté them in a skillet or you can bake them in the oven at 250°F for about 30 minutes, flipping halfway through.

5.) Once the soy curls or tofu are cooked to your desired texture, serve them hot as a plant-based protein component in salads, wraps, bowls, or alongside your favorite sides.
